This classic condiment can be picked up in little plastic bottles at most poke outlets in Hawaii. Sprinkled over your poke, or just about anything else, it seasons while adding a spicy kick. This is a basic recipe – try experimenting with other spices or seasonings.

Ingredients

Quantity Ingredient
2 hot red chilles, such as bird’s eye, sliced
1 garlic clove, peeled and crushed
2 x 5mm fresh ginger
300ml freshly boiled water
31/2 tablespoons apple cider vinegar
2 teaspoons sea salt

Method

  1. Place all the ingredients in a sterilised glass bottle or jar. Stir well, then leave at room temperature to let the flavours develop for 48 hours. This will keep for up to 1 month in the fridge.
