Lemongrass + kaffir lime leaf oil

Ingredients

Quantity Ingredient
4 kaffir lime leaves
2 sticks lemongrass, chopped into 1 cm pieces
200ml light flavourless oil
11/2 tablespoons sugar

Method

  1. Combine all the ingredients in a saucepan and bring to a slow simmer over a low heat. Simmer for 10 minutes, then take off the heat and allow to cool. Once cooled, transfer to a sterilised jar. This oil will keep for up to 1 month in the fridge.
