I like this chickpea curry – and it is a good source of many vitamins and calcium. If you are on a vegetarian diet, it is a perfect dish to give you extra energy.

Ingredients

Quantity Ingredient
2 cups chickpeas
water
1 stalk lemongrass, white part only
1 onion, chopped
3 green chillies, roughly chopped
3 garlic cloves, chopped
1 cup unsweetened coconut milk
1/2 cup water, if needed
1/2 lemon, juiced
1/2 cup coriander leaves, chopped

Tempering spices

Quantity Ingredient
2 tablespoons oil
1/4 teaspoon fenugreek
1 teaspoon dried red chilli flakes
1 cinnamon stick
1/4 teaspoon mustard seeds
10 cm piece rampe
10 curry leaves
1/2 teaspoon salt
1 cup tomatoes, chopped or canned

Spice mix

Quantity Ingredient
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin
1/2 teaspoon chilli powder
1 teaspoon sweet paprika powder
1/4 teaspoon ground turmeric
1 teaspoon maldive fish flakes, (optional)

Method

  1. Soak chickpeas in water overnight. Drain and place in a large pot over medium heat. Add enough water to cover and boil for 30–35 minutes, until they are soft.
  2. Bruise the lemongrass with the back of a spoon. Chop roughly. Place onion, lemongrass, chilli and garlic in a food processor and blend into a fine paste.
  3. Place tempering ingredients except tomatoes in a pan on medium heat and sauté until golden – about 30 seconds. Add tomatoes, lemongrass–onion paste and spice mix ingredients and cook for a further 3 minutes until mixture is coated thoroughly. Drain chickpeas, add to mixture and cook for a further 2 minutes. Add coconut milk and bring to the boil; also add the extra 1/2 cup of water if you prefer a runny sauce. Simmer for 3 minutes, stirring continuously so ingredients don’t stick to pan.
  4. Check seasoning, add salt if desired, remove from heat and add lemon juice. Sprinkle coriander on top and serve with pol sambol, roti or rice.
