This recipe comes from Senaka, the head chef at the Kandalama Hotel in Dambulla. One of the best hotels in Sri Lanka, it is renowned throughout the world for its international standards of environmental practices.

The chefs at the hotel produce dishes belonging to all the international cuisines, but their best is the selection of Sri Lankan dishes. I trained at Kandalama as a junior chef. Senaka was older than me and was a qualified chef when I was there, but he often gave me ideas for dishes.

Ingredients

Quantity Ingredient
1 mango
1 teaspoon mustard seeds
50ml vinegar
1 tablespoon vegetable oil
1/2 onion, finely chopped
2 teaspoons garlic, crushed
1 teaspoon ginger, crushed
4-5 curry leaves
1 cinnamon stick
1/2 cup light coconut milk
1/2 cup thick coconut milk
salt, to taste

Method

  1. Peel mango and cut into pieces lengthways.
  2. Grind mustard seeds and vinegar together until they form a paste.
  3. In a pan, heat oil over medium heat, add onion, garlic, ginger, curry leaves and cinnamon and sauté until onion is golden – about 2–3 minutes. Add mango, light coconut milk and mustard seed mixture and bring to the boil.
  4. Reduce heat and simmer until mango is cooked and tender – about 3 minutes. Add thick coconut milk and simmer for a further 10 minutes. Taste and add salt if necessary.
  5. This is a side dish to be served with meat and vegetable curries.
