Themparaduwa is a thick spice mixture which gives extra flavour to dishes. It can be added to any curry just before serving: use about 1 tablespoon of the spicy onion mixture for four servings. While you don’t eat the curry leaves, the cinnamon stick or the rampe, you should leave them in the mixture while you store it for continued flavour. This can be kept in an airtight container in the fridge for about a week.

Ingredients

Quantity Ingredient
5 tablespoons oil
2 medium onions, chopped
3-4 Salted chillies, broken into pieces
1/2 teaspoon mustard seeds
1 cinnamon stick
1/4 teaspoon fenugreek
1 piece rampe
15 curry leaves
4 garlic cloves, sliced
1 teaspoon sweet paprika

Method

  1. Place oil in a pan over medium heat, add all ingredients and sauté until golden brown.
