Despite the fact that they share a name, stringhoppers are nothing like the bowl-shaped hoppers. Stringhoppers are little mats of rice vermicelli eaten with curry sauces, chutney and sambols. The method takes time to learn and longer to master, but once you have it you will be rewarded with every meal.

Ingredients

500g chinese rice flour or standard rice flour
1 1/2 teaspoons salt
750ml water

Method

  1. Prepare a steamer on a pot of boiling water.
  2. Put flour and salt in a bowl and mix thoroughly with a spoon. Make a well in the middle. Add water, stirring continuously. Don’t over mix – dough should be ready to use in 3–4 minutes of mixing at the most. The dough should resemble a pasta dough: it should be strong but not tough.
  3. Fill the stringhopper mould with the dough and squeeze the dough out through the holes in the base, moving the mould in a circular motion, to totally cover a stringhopper mat beneath the mould. The hoppers should be about 10 cm in diameter and should take about two rotations of the mould to make. Flick the mould upwards to break the dough threads.
  4. Stack mats on top of each other and place in the steamer. Cover with a lid, return water to the boil and steam for 10–12 minutes. Remove mats from the steamer and, while still hot, take each stringhopper off its mat. Squeeze more dough onto the mats and repeat steaming; continue making batches until dough is used up.
  5. Serve warm with curries and sambols.

Note

  • While they are simple, you need a little equipment to make stringhopper. The stringhopper moulds and mats are available from Indian grocery stores and are quite inexpensive. Instead of mats, you can squeeze the dough onto cooling racks with closely spaced grids, but there is no alternative for a stringhopper mould, which churns out a shower spray of thin pasta strings.
