Mushrooms fried with chicken

Ingredients

Quantity Ingredient
60ml oil
1 large onion, thinly sliced
3 garlic cloves, finely chopped
500g chicken breast or thigh fillets, thinly sliced
1 tablespoon light soy sauce
500g fresh mushrooms, halved if large

Method

  1. Heat the oil in a wok or large heavy-based frying pan over medium heat. Add the onion and garlic and cook until golden brown. Add the chicken and stir-fry for 2 minutes, on high heat, then reduce the heat to medium, cover, and cook for 3 minutes. Add the soy sauce and season with salt, to taste, then add the mushrooms, re-cover, and simmer for 3–4 minutes. Increase the heat and cook uncovered until most of the liquid has evaporated. Serve hot with rice.
