Bananas cooked in coconut milk

Ingredients

Quantity Ingredient
6-8 large ripe bananas
500ml thick coconut milk
2 tablespoons sugar

Method

  1. Peel and cut each banana into 3 or 4 even-sized pieces. Put the coconut milk and sugar in a saucepan over low heat. Bring to a simmer and stir until thick and creamy. Add the bananas and continue to simmer for a further 5 minutes, or until the bananas are soft but not mushy. Serve warm as a dessert.
