Moan chua noeung phset kream

Stir-fried chicken with mushrooms

Ingredients

Quantity Ingredient
6 dried shiitake mushrooms
1.5kg whole chicken
2 tablespoons oil
4 garlic cloves, crushed
1/2 teaspoon fresh ginger, finely grated
2 tablespoons fish sauce
2 teaspoons sugar
2 tablespoons fresh coriander leaves, chopped, to garnish

Method

  1. Soak the mushrooms in hot water for 20–30 minutes. Drain well, cut off and discard the stems and thinly slice the caps.
  2. Joint the chicken and cut into serving pieces.
  3. Heat the oil in a wok or large heavy-based frying pan over medium heat. Add the garlic and ginger and cook for a few seconds, then add the chicken and stir-fry until the colour changes. Add the mushroom, fish sauce, sugar and 250 ml water, cover, and simmer for 30 minutes, or until the chicken is cooked. Garnish with coriander and serve with rice.
