Ingredients

Quantity Ingredient
2 tablespoons peanut oil
1 teaspoon sesame oil
1 large garlic clove, crushed
1 teaspoon fresh ginger, grated
750g vegetables, sliced
125ml hot water or light stock
1 tablespoon oyster sauce
2 teaspoons light soy sauce
1/2 teaspoon salt
2 teaspoons cornflour

Method

  1. Heat the peanut and sesame oils in a wok or large heavy-based frying pan over high heat. Add the garlic, ginger and vegetables and stir-fry for 2 minutes. Add the hot water, then the combined oyster and soy sauces and salt. Cover and simmer for 4 minutes. In a bowl, combine the cornflour and 1 tablespoon cold water and stir to make a smooth paste. Push the vegetables to one side of the wok and add the cornflour paste, stirring until the sauce thickens. Toss the vegetables to coat and serve immediately with white rice.
