Won tons are little squares of egg noodle dough enclosing a savoury meat mixture. They may be deep-fried and served as a crisp snack or they may be boiled in soup. Won tons are the main ingredient in ‘short soup’.

Ingredients

Quantity Ingredient
6 dried shiitake mushrooms
3 tablespoons bamboo shoot, finely chopped
125g raw prawn meat, finely chopped
4 spring onions, finely chopped
250g minced pork
1 1/2 teaspoons salt
1 tablespoon light soy sauce
1 teaspoon sesame oil
300g won ton wrappers
peanut oil, for deep-frying

Method

  1. Soak the mushrooms in hot water for 20–30 minutes. Drain, then cut off and discard the stems and thinly slice the caps.
  2. Blanch the bamboo shoot in a saucepan of boiling water for 1 minute, then drain.
  3. In a bowl, combine the mushroom, bamboo shoot, prawn meat, spring onion, pork, salt, soy sauce and sesame oil.
  4. Lay the won ton wrappers out on a clean work surface. Take 1 heaped teaspoon of the prawn mixture and place in the centre of each wrapper. Moisten the edges of the dough with water, fold over to make a triangle with points crossing rather than lined up and press together firmly. Then bring the two ends together, dab with a little of the filling mixture where they join and press to seal.
  5. Heat the peanut oil in a wok or large heavy-based frying pan over medium heat. Gently lower the won tons into the hot oil and deep-fry, in batches, for about 2 minutes, or until golden. Serve as an appetiser or as part of a meal with sweet sour sauce.
