You can also make this refreshing drink with buttermilk. Use twice as much as yoghurt and add less water.

Ingredients

Quantity Ingredient
125g plain yoghurt
375ml iced water
pepper and salt, to taste
ice cubes, to serve

Method

  1. Put the yoghurt into a deep jug and beat with a spoon to take any lumps out of it. Add the water, gradually at first, mixing well. Season to taste with salt and pepper and serve in glasses with ice cubes.

Variation

  • You can make a sweet version of this lassi by stirring 1–2 tablespoons sugar into the yoghurt before adding the iced water. Afterwards, if desired, flavour with 1 teaspoon rosewater or a pinch of ground cardamom before serving.
