Ingredients

Quantity Ingredient
1 grapefruit or pomelo fruit, peeled
1 orange or mandarin, peeled
2 tart green apples, peeled and thinly sliced
1 cucumber, peeled and diced
1 small pineapple, peeled and diced
1/2 teaspoon dried shrimp paste
1/2 teaspoon Sambal ulek
1 tablespoon dark palm sugar, chopped
1 tablespoon kecap manis
2 tablespoons lemon juice

Method

  1. Break up the grapefruit and orange, cutting between the membranes to release the segments and remove the seeds — do this over a bowl, saving any juices. Place in a serving bowl with the apple, cucumber and pineapple.
  2. Wrap the shrimp paste in foil and roast under a preheated griller for 5 minutes, turning once. Unwrap the shrimp paste and put in a bowl along with the sambal ulek, palm sugar, kecap manis and lemon juice, stirring well to combine. Pour over the fruit and toss well to coat. Allow to stand for a few minutes before serving.
