Ikan kukus (Nonya)

Ingredients

Quantity Ingredient
4 dried shiitake mushrooms
500g firm white fish fillets
a few drops sesame oil
3 tablespoons chinese preserved vegetables, finely shredded
1 fresh red chilli, seeded and thinly sliced
2 teaspoons light soy sauce
2 spring onions, finely sliced
2 tablespoons fresh coriander leaves
1 lettuce leaf, shredded

Method

  1. Soak the dried mushrooms in 500 ml hot water for 20–30 minutes, then drain, remove the stems and thinly slice the caps.
  2. Wipe the fish with damp paper towel. Grease a heatproof dish with the sesame oil. Season the fish with salt and pepper and place in the dish. Scatter over the sliced mushroom, preserved vegetable, chilli and soy sauce, cover with foil and steam for 20 minutes. Garnish with the spring onion, coriander and lettuce. Serve with white rice.
