Sambal goreng ikan

Ingredients

500g fresh sprats or small whitebait, about 5–7.5 cm long
2 teaspoons tamarind pulp
1 onion, roughly chopped
2 candlenuts or brazil nuts
2 strips lemon zest
2 teaspoons chilli powder
1 teaspoon laos powder
1/2 teaspoon dried shrimp paste
peanut oil, for deep-frying
125ml thick coconut milk
5 daun salam leaves
3/4 teaspoon salt, or to taste
plain flour, for dusting

Method

  1. Wash the fish well. If using sprats, remove the heads and stomach bags. Rinse again in cold water and drain in a colander, then on paper towel. Set aside.
  2. Soak the tamarind pulp in 80 ml hot water for 10 minutes. Squeeze to dissolve the pulp in the water, then strain, discarding the seeds and fibre.
  3. Put the onion, candlenuts, lemon zest, chilli powder, laos powder and shrimp paste into a food processor and process to a smooth paste. It may be necessary to add a tablespoon or two of the tamarind liquid to enable the mixture to be drawn down on to the blades.
  4. Heat 60 ml of the peanut oil in a wok or large heavy-based frying pan over low heat. Add the chilli mixture and stir until it darkens and the oil separates. Add the remaining tamarind liquid, coconut milk, daun salam leaves and salt and simmer until thick and oily. Remove from the heat and set aside.
  5. Roll the fish in the flour to coat, shaking off any excess. Heat the peanut oil in a wok or large heavy-based saucepan over medium heat. When the oil is hot, deep-fry the fish, in batches, for 4–5 minutes, or until brown and crisp. Drain on paper towel.
  6. To serve, add the fish to the warm spice mixture and stir to combine. Serve at once, while the fish is still crisp.
