Chilli and peanut sauce

Ingredients

Quantity Ingredient
oil, for deep-frying
140g raw peanuts
10 large dried red chillies
1 teaspoon tamarind pulp
1 onion, roughly chopped
6 garlic cloves, peeled
1/2 teaspoon dried shrimp paste
60ml coconut oil or peanut oil
1 teaspoon salt
250ml thick coconut milk
1 tablespoon dark palm sugar, chopped

Method

  1. Heat the oil in a wok or large heavy-based saucepan over medium heat. When the oil is hot, deep-fry the peanuts until just golden, then remove them using a slotted spoon and drain on paper towel. The peanuts will continue to cook in their own heat, so don’t leave them in the oil until they are brown or they will be overdone and bitter. Rub off the skins and pound, crush or process until they are coarsely ground — they should be crisp and have lots of crunchy bits, not worked to a smooth paste.
  2. Put the dry chillies in a bowl with 500 ml hot water. Leave to soak for 20 minutes. Drain and reserve 2 tablespoons of the soaking liquid. Soak the tamarind pulp in 1 tablespoon hot water for 10 minutes. Squeeze to dissolve the pulp in the water, then strain, discarding the seeds and fibre.
  3. Put the soaked chillies and reserved soaking liquid into a food processor with the onion, garlic and dried shrimp paste and process to make a smooth paste.
  4. Heat the coconut oil in a wok or large heavy-based frying pan over medium heat. Add the chilli mixture and stir-fry until it darkens. Remove from the heat and stir in the tamarind liquid, salt, coconut milk and palm sugar and transfer to a bowl to cool. When the sauce has cooled stir in the peanuts so they retain their crunchiness. Serve hot with Malay beef satay and compressed rice cakes. Garnish with sliced cucumber — it is ideal to cool the heat of the sauce.
