Ingredients

Quantity Ingredient
1.5kg whole chicken
3 teaspoons salt
1/2 teaspoon whole black peppercorns
3-4 celery tops
1 large brown onion, sliced
2 tablespoons peanut oil
6 daun salam leaves, (optional)
2 garlic cloves, finely chopped
1/2 teaspoon fresh ginger, finely grated
1/2 teaspoon dried shrimp paste
1/2 teaspoon ground turmeric
2 teaspoons ground coriander
1 teaspoon ground cumin
4 candlenuts or brazil nuts, finely grated
125g rice vermicelli
2 large potatoes, peeled, boiled and diced
lemon juice, to taste
8 spring onions, finely sliced, to garnish
2 hard-boiled eggs, peeled and finely chopped, to garnish
potato crisps, crumbled, to garnish

Method

  1. Joint the chicken. Put the chicken pieces into a large saucepan with enough cold water to cover. Add the salt, peppercorns, celery tops and half of the onion. Bring to the boil, then reduce the heat to low, cover, and simmer for 30 minutes, or until the chicken is cooked through. Allow to cool, then strain and reserve the stock. Remove and discard the skin and bones and thinly slice the meat. Set aside.
  2. Heat the peanut oil in the saucepan over medium heat. Add the daun salam leaves, if using, and the remaining onion and cook until the onion is golden. Add the garlic, ginger and shrimp paste, crushing the shrimp paste with the back of a spoon. Add the turmeric, coriander, cumin and candlenuts and stir-fry for a few seconds longer. Add the strained stock and bring back to the boil, then reduce the heat to low, cover, and simmer for 10 minutes.
  3. Meanwhile, soak the rice vermicelli according to the packet instructions, then drain and cut into short lengths. Add to the simmering soup, return to the boil, and cook for 1 minute. Add the chicken meat, potato and lemon juice and heat through. Pour into serving dishes and garnish with the spring onion and egg. Serve the potato crisps in a separate bowl for sprinkling on individual servings.
