Ingredients

750g skinless, boneless firm white fish fillets
1 teaspoon salt
1/2 teaspoon five-spice powder
1 tablespoon cornflour, plus 1 teaspoon extra
1 tablespoon egg white
125ml oil
1 garlic clove, crushed
1/2 teaspoon fresh ginger, finely grated
150g white chinese cabbage, sliced
6 spring onions, cut into 5 cm lengths
1 tablespoon light soy sauce
1 tablespoon oyster sauce

Method

  1. Wipe the fish with damp paper towel. Cut the fish into serving pieces. Combine the salt, five-spice powder and cornflour in one bowl. Put the egg white in another bowl.
  2. Heat the oil in a large heavy-based frying pan over medium heat. Dip the fish pieces first in the egg white and then toss in the cornflour mixture, shaking off any excess. When the oil is hot, deep-fry the fish, in batches, for 1–2 minutes, until just cooked through and crisp. Drain on paper towel and keep warm while preparing the sauce.
  3. Pour off all but 1 tablespoon of the oil from the pan, add the garlic, ginger and cabbage and stir-fry for 1 minute. Add the spring onion and stir-fry for 1 minute, then add the soy sauce, oyster sauce and 125 ml water and bring to the boil. In a small bowl, combine the extra cornflour and 1 tablespoon water to make a smooth paste. Add to the pan and stir until the sauce boils and thickens.
  4. Arrange the fish on serving plates with the hot sauce spooned over the top and serve immediately with rice or noodles.
