Ingredients

Quantity Ingredient
1 litre full-fat goat’s milk
1 tablespoon rennet
2 tablespoons lemon juice, salt

Method

  1. Heat the milk to 25°C and take off the heat. Stir in the rennet and lemon juice, then cover the pan and leave to rest for an hour. Line a colander with muslin (cheesecloth) and stand it over a large bowl. Strain the mixture through the muslin. Gather the corners of the cloth and hang it over a bowl. Leave to drip for a couple of hours until the consistency of the cheese seems right to you.
