Ingredients

500ml milk
150g marshmallows
4 eggs, separated
40g caster sugar
1 tablespoon water
125g butter
80g plain flour
pinch salt

24 cm cake tin, silicone or greased with butter and lined with baking parchment

Method

  1. Preheat the oven to 150°C.
  2. Simmer the marshmallows in milk in a saucepan until totally melted. Leave to cool.
  3. Meanwhile, beat the egg yolks with the sugar and water until the mixture whitens. Melt the butter and pour it into the mixture. Then add the flour and salt. Beat for a few minutes more. Pour in the milk and marshmallow mixture little by little, whisking constantly.
  4. Beat the egg whites until stiff and, using a whisk, gently incorporate them into the batter. Pour into the buttered cake tin, smooth the surface with the blade of a knife and bake in the oven for 45 minutes. When the cake comes out of the oven it will wobble slightly.
  5. Before turning it out, leave it to set in the fridge for at least 2 hours.

Chef’s tip

  • Dust with icing sugar.

    You can also decorate with a few marshmallows lightly browned with a kitchen blowtorch or from under a grill.
