Another aspect of celebration is, of course, to indulge in luxury. However, sometimes the most simply presented of extravagant delicacies holds the most meaning for me.

  1. Peel some good waxy potatoes, such as russet burbank or kipfler. Wipe them dry, but don’t wash them, as this rinses off the starch. Cut the potatoes into 2 mm slices, then cut the slices into uniform rounds with a cookie cutter. Work quickly to prevent discolouration, if browning bothers you. Gently toss with melted clarified butter and some salt, coating them well. Spread on a paper-lined baking tray and bake in a preheated oven at 190°C for about 15 minutes or until golden and crisp. If they are colouring unevenly turn them over and move them around.
  2. The luxury is indulging in hand-cut potato crisps. It can further be heightened by eating them with thin slices of lardo and black sturgeon caviar (ethically farmed, of course).
