Ingredients

Quantity Ingredient
1/2 garlic cloves, crushed to a smooth paste with a pinch of salt
50g tahini
1 tablespoon extra virgin olive oil
1/2 lemon, juiced
salt
freshly ground black pepper

Method

  1. Combine the garlic, tahini and oil in a small bowl.
  2. Add the lemon juice, then whisk in 100ml of water a spoonful at a time, stirring briskly between additions to make a smooth sauce. The consistency should be like double cream.
  3. Season to taste with salt and pepper.
