Rocket with cherries, quick pickled shallots and almonds

Fruit salad served savoury. Along with the rocket, radicchio and toasted almonds, the cherries here give a big showy and juicy burst to this pretty salad.

Ingredients

Quantity Ingredient
4 medium shallots, thinly sliced
3 tablespoons red wine vinegar
1 small radicchio, shredded
100g rocket
200g cherries, stemmed, stoned and cut in half
6 tablespoons olive oil
50g flaked almonds, toasted
salt
freshly ground black pepper

Method

  1. Combine the shallots with the red wine vinegar and leave to macerate in a small bowl while you prepare the rest of the ingredients.
  2. In a large bowl or on a plate, combine all the ingredients except the almonds, including the shallots along with their vinegar. Check the salad leaves for seasoning, adjusting with salt and pepper if necessary.
  3. Top with the toasted almonds and serve immediately.
