Baked salmon with rosemary white beans and buttered spinach

Simple and satisfying, this brings together virtually every essential nutrient for the health of the nervous system.

Ingredients

Quantity Ingredient
1 salmon fillet
2 garlic cloves, finely chopped
2 teaspoons olive oil
sea salt
200g canned cannellini beans, drained
1 sprig rosemary
200g baby spinach
2 teaspoons butter

Method

  1. Preheat the oven to 200°C.
  2. Place the salmon on a baking tray and bake for around 15 minutes.
  3. Meanwhile, sauté the garlic in the olive oil, along with a good pinch of sea salt, for around three minutes. Add the beans and the rosemary with 1 tablespoon of water and simmer and stir for about 10 minutes. Discard the rosemary sprig, as its flavour will have infused by now.
  4. Quickly sauté the spinach in the butter just long enough for the leaves to wilt.
  5. Make a bed of spinach on a plate and add the rosemary-flavoured beans. Place the salmon on top and serve.
