Chicken and spinach burgers

These unusual looking burgers are great: nutrient-packed yet very light, full of magnesium and with loads of high-quality protein.

Ingredients

Quantity Ingredient
1/2 red onion, finely chopped
1 large garlic clove, finely chopped
1/2 tablespoon olive oil
sea salt
freshly ground black pepper
4 handfuls spinach
2 skinless chicken breasts, chopped
1 egg

Method

  1. Sauté the onion and garlic in the olive oil, with a pinch of sea salt, until the onion softens. Add the spinach and continue to sauté until it has wilted. Allow to cool.
  2. Put the chicken breast in a food processor with the spinach mixture. Season with salt and pepper. Crack in the egg, then process into a thick, green, mince-like texture. Preheat your grill to its highest setting.
  3. Form the mixture into burger patties and place them on a foil-lined baking tray, then under the preheated grill. Grill for 15–20 minutes, turning regularly, to ensure they are cooked throughout.
  4. These can be served in a burger bun, or with salad or cooked vegetables.
