Chicken satay skewers with cashew quinoa and red cabbage sesame salad

I’m a real lover of satay. It is traditionally served with cubes of compacted white rice, known as ketupat. I’ve opted for quinoa here instead, to make it a nice slow burner.

For the chicken and quinoa

1 large skinless chicken breast, chopped
sea salt
freshly ground black pepper
50g quinoa, (dry weight)
2 teaspoons vegetable bouillon powder
3 tablespoons grated red cabbage
1 teaspoon mayonnaise
1 teaspoon soy sauce
1 teaspoon sesame seeds
6-8 cashew nuts

For the satay sauce

Quantity Ingredient
1 heaped tablespoon peanut butter
1 teaspoon honey
2-3 teaspoons soy sauce
1/4 teaspoon chinese 5-spice powder
1 garlic clove, finely chopped
1/2 chilli, finely chopped

Method

  1. Preheat the oven to 200°C.
  2. Thread the chicken on to two metal skewers. Season with salt and pepper, place on a foil-lined baking tray and bake for around 25 minutes, turning occasionally.
  3. Place the quinoa and bouillon powder into a saucepan, top with just-boiled water and allow to simmer for around 25 minutes. The quinoa should soften and little ‘tails’ should form on the side of it. Drain and set aside.
  4. Mix the cabbage, mayonnaise, soy sauce and all the sesame seeds together to make a coleslaw-type salad.
  5. Mix all the satay sauce ingredients together in a small bowl with 3–4 tablespoons of hot water. When you first add them together, the ingredients may look like they have separated. This is normal. Mix well and they combine beautifully.
  6. Place the quinoa in the centre of the plate and break the cashews over it. Lay the chicken skewers on top of it, then smother with the sauce. Place the cabbage salad to the side.
