Mediterranean salmon with curly kale and sweet potato mash

This is such a delightful dish and an absolute nutrient bath, too! Carotenoids, magnesium, omega 3 fatty acids, flavonoids… this has it all.

Ingredients

Quantity Ingredient
1 large red onion, finely chopped
2 garlic cloves, finely chopped
1 red pepper, finely chopped
1 tablespoon olive oil
sea salt
freshly ground black pepper
400g canned chopped tomatoes
1 tablespoon pitted black olives, chopped
2 salmon fillets
1 large sweet potato, peeled and finely chopped
4 handfuls curly kale

Method

  1. Preheat the oven to 200°C.
  2. Sauté the onion, garlic and pepper in the oil, with a pinch of sea salt, until the onion and pepper begin to soften. Add the tomatoes and olives, bring to the boil, then reduce the heat and allow to simmer for 25–30 minutes. The sauce will reduce and begin to resemble a ratatouille. Taste and season again if necessary.
  3. Place the salmon on a baking sheet and bake at the top of the oven for 15–20 minutes, until cooked throughout and turning golden at the edges. Be sure to check on it during cooking.
  4. Meanwhile, place the sweet potato in a saucepan and cover with boiling water. Simmer for around 15 minutes, until soft enough to fall apart under a fork. Drain and mash, adding a little salt and pepper to taste. (You can also jazz this up by adding mustard, or soft goat’s cheese.) Steam the kale over boiling water for a few minutes, until tender (it will turn a brighter green).
  5. Serve the mash and kale on plates. Lay the salmon across and top with the pepper sauce.
