Pesto flax-crusted salmon with minted butter greens

This is oozing with good fats and magnesium. Rich, flavoursome and really easy to prepare. Don’t be afraid of using butter, it’s a million times better for you than vegetable oils and margarines!

Ingredients

Quantity Ingredient
1 1/2 tablespoons pesto
2 tablespoons ground flax seed
2 salmon fillets
4 large handfuls chard or spring greens, shredded
35g butter
200g garden peas
mint sprigs, leaves chopped
sea salt
freshly ground black pepper

Method

  1. Preheat the oven to 200°C.
  2. Mix the pesto and ground flax seed together to form a paste.
  3. Place the salmon fillets on a baking tray and bake at the top of the oven for around eight minutes. Remove, top with the pesto mixture and return to the oven for a final 10 minutes.
  4. Place the greens, butter and peas in a pan. Sauté over a medium heat for eight to 10 minutes, until the greens have wilted and the peas are beginning to soften.
  5. Add the mint, season with salt and pepper and mix well. Serve with the salmon.
