Sweet potato, kale and red lentil stew

This is big time comfort food. Seriously filling, yet it won’t stick to your ribs. Masses of B vitamins, magnesium and other goodies.

Ingredients

Quantity Ingredient
1 large red onion, finely chopped
2 garlic cloves, finely chopped
1 tablespoon olive oil
sea salt
1 heaped tablespoon miso paste
1 large sweet potato, skin-on, chopped
300g red lentils
4-5 large handfuls curly kale

Method

  1. Begin by sautéing the onion and garlic in the olive oil, with a pinch of sea salt, until the onion has softened. Add the miso paste and stir well.
  2. Now tip in the sweet potato and the lentils, with enough hot water to just cover the pan contents.
  3. Simmer until the lentils have mostly broken down and the sweet potato has softened. You may need to add more water as you go. The end consistency should resemble porridge.
  4. At this stage, add the kale and continue to simmer until the kale has softened and wilted.
