Broccoli and Stilton soup

This soup is a real classic and needs little introduction from me. Magnesium, B vitamins and calcium are the key nutrients here.

Ingredients

Quantity Ingredient
1 onion, finely chopped
1 celery stick, finely sliced
1 leek, finely sliced
2 tablespoons olive oil
sea salt
1 potato, peeled and chopped
1 head broccoli, broken into small florets
1 litre vegetable stock
150g stilton cheese

Method

  1. Sauté the onion, celery and leek in the oil, with a good pinch of sea salt, until all the vegetables have become soft.
  2. Add the potato and broccoli and cover with the stock. Simmer for 10–15 minutes, until the broccoli and potato have softened.
  3. Crumble in most of the Stilton, leaving just a small piece behind. Transfer to a blender, or use a hand-held blender, to blend into a thick soup.
  4. Mix in the remaining Stilton before serving.
