This is one of my favourite salads. A traditional cobb includes bacon, but I have left it out here. If you can find a decent organic bacon without nitrates, then feel free to add it. I have also gone for a balsamic dressing to keep it a little lighter, rather than cobb salad’s usual ranch-style. This salad will seriously fill you up!

Ingredients

For the salad

Quantity Ingredient
2 large handfuls mixed salad leaves
1 large chicken breast, cooked
2 eggs, hard-boiled
1/2 very ripe avocado
50g danish blue cheese

For the dressing

Quantity Ingredient
1 teaspoon balsamic vinegar
1 tablespoon extra virgin olive oil
sea salt
freshly ground black pepper

Method

  1. Place the leaves on a plate. Slice the chicken and the eggs. Chop the avocado into small cubes. Place these all on top of the leaves and crumble on the blue cheese.
  2. Combine the dressing ingredients and whisk well to an emulsion. Dress with the dressing.
