King prawn and guacamole open sandwich

This gorgeous lunch packs a serious nutritional punch. Selenium, magnesium, B vitamins… It definitely ticks the right boxes.

Ingredients

Quantity Ingredient
1/2 very ripe avocado
1 garlic clove, finely chopped
1/2 red chilli, finely chopped
1/2 lime, juiced
sea salt
freshly ground black pepper
1 slice rye bread
75g cooked king prawns, deveined if necessary
drizzle olive oil

Method

  1. Scoop the flesh of the avocado into a bowl and add the garlic, chilli, lime juice, plus salt and pepper to taste. Mash into a coarse guacamole.
  2. Toast the rye bread.
  3. Spread the avocado mixture over the toasted rye bread. Top with the king prawns. Add a little black pepper, then drizzle with olive oil.
