I got the idea for these from an old sandwich bicycle delivery company that used to deliver to a clinic where I worked. Simple, but so moreish it is unreal, plus they tick almost every box for supporting nervous system health: B vitamins, magnesium, flavonoids… and low GL to boot!

Ingredients

Quantity Ingredient
1 small carrot, grated
1 small raw beetroot, grated
1 spring onion, chopped
3 tablespoons houmous
1 small wholemeal pitta bread

Method

  1. Mix the carrot, beetroot and spring onion together, then add the houmous and mix well.
  2. Gently warm the pitta bread, then slice straight through the middle to give you two pockets.
  3. Tease open the pockets and stuff with the houmous mixture.
  4. Perfect wrapped up for lunch on the go, or served with a salad.
