This dish was one of those wonderful happy discoveries that arise when there are left over odds and ends in the fridge that need using. The dressing sounds weird but, my word, it is flavour central!

Ingredients

Quantity Ingredient

For the salad

Quantity Ingredient
1 small sweet potato, skin-on, chopped
1-2 teaspoons olive oil
sea salt
freshly ground black pepper
2 handfuls mixed salad leaves
60g feta cheese
1 teaspoon pine nuts

For the green dressing

Quantity Ingredient
1/2 very ripe avocado
1 teaspoon white vinegar or cider vinegar
1 small garlic clove, chopped
15 g bunch coriander

Method

  1. Preheat the oven to 200°C.
  2. Place the sweet potato on a baking tray, drizzle with the oil, sprinkle over a little sea salt and bake for 20–30 minutes. I like the pieces to begin to caramelise on the edges.
  3. To make the dressing, place the avocado flesh, vinegar, garlic, coriander and 2–3 tbsp of water in a blender, add salt and pepper to taste and blend into a smooth, luminous dressing.
  4. Combine the roasted sweet potato and salad leaves in a serving bowl. Crumble over the feta.
  5. Pour over the dressing and toss, then sprinkle with the pine nuts to serve.
