This is just such a treat. I don’t eat masses of red meat, but a steak every now and again can give you such an iron fix that it will really last. The vitamin C in the spinach leaves and dressing increase your absorption of it, too! A winner all round.

For the dressing

Ingredients

Quantity Ingredient
2 teaspoons horseradish sauce
1/2 lemon, juiced
1 tablespoon extra virgin olive oil

For the salad

Quantity Ingredient
1 sirloin steak
2 handfuls baby spinach
handful pea shoots
3-4 radishes, sliced

Method

  1. Combine the dressing ingredients and whisk well to form an emulsion.
  2. Cook the steak according to your preference, then leave it to rest for five minutes. Slice.
  3. Combine the leaves, shoots and radishes, top with the steak and drizzle with the dressing.
