Warm roasted vegetable and feta salad

This is glorious at any time of year. The bright, vibrant colours make it a great summer dish but, as it is served warm and bursting with flavour, it is equally satisfying in the cooler months.

Ingredients

Quantity Ingredient
1 courgette, sliced into rounds
1 large red pepper, chopped into bite-sized pieces
1 large red onion, halved then sliced
4-5 mushrooms, sliced
olive oil
1/2 teaspoon garlic granules
1/2 teaspoon smoked paprika
sea salt
freshly ground black pepper
a small bunch curly parsley, leaves coarsely chopped
80g feta cheese

Method

  1. Preheat the oven to 200°C.
  2. Place the vegetables in a roasting tin, drizzle with a little olive oil and toss well. Sprinkle over the garlic granules and paprika, season to taste with salt and pepper and toss well again.
  3. Place at the top of the hot oven, and roast for 20–25 minutes, stirring frequently.
  4. Place the roasted vegetables on to a serving plate, sprinkle over the parsley, then crumble over the feta.
