Avocado, coriander and cheddar omelette, with spicy salsa

I first had this breakfast one early morning in LA, and fell in love with it. Now I have it at home and it brings a little bit of sunshine into my day!

Ingredients

Quantity Ingredient

For the salsa

Quantity Ingredient
2 large tomatoes, finely chopped
1/4 red onion, finely chopped
2 sprigs coriander, leaves stripped
hot sauce, to taste
sea salt
freshly ground black pepper

For the omelette

Quantity Ingredient
1/2 tablespoon olive oil
2 large eggs, lightly beaten
1/4 avocado, finely chopped
handful grated mature cheddar

Method

  1. Combine all the salsa ingredients in a bowl, season and mix well.
  2. Pour the oil into an omelette pan and set it over a medium-high heat. Add the eggs.
  3. When the omelette is virtually cooked, add the avocado and Cheddar. Continue cooking until the cheese has started to melt.
  4. Transfer to a plate, folded if you want, then top with the salsa.
