This is a lovely simple yet flavoursome breakfast.

Ingredients

Quantity Ingredient
1/2 onion, finely chopped
1/2 celery stalk, finely sliced
1/2 tablespoon olive oil
sea salt
1 large handful baby spinach
2 large eggs, lightly beaten

Method

  1. Sauté the onion and celery in the olive oil in a small omelette pan, with a pinch of salt, until the onion softens. Meanwhile, preheat the grill.
  2. Add the spinach to the onion mixture and cook just until it wilts.
  3. Pour the eggs over the vegetables and cook until you see the edges begin to set, but there is still uncooked egg in the centre of the pan.
  4. Place under the hot grill until the remaining egg cooks through.
