I’m not massively in favour of consuming too many grains when managing diabetes. However, some are certainly better than others and can form a small part of the diet. Oats are one of those. On their own I think they are still a little on the high GI side. But add some protein to the mix and it creates quite a slow-burner of a dish.

Ingredients

Quantity Ingredient
50g porridge oats
350ml milk of your choice, (dairy or dairy-free)
1/2 teaspoon stevia
2 tablespoons crushed mixed nuts

Method

  1. Place the oats, milk and stevia in a saucepan, set over a low heat and cook until the oats have softened and a creamy texture has formed.
  2. Transfer to a bowl and top with the nuts. Add a small handful of berries as well, if you like, as an occasional treat.
