This is a lovely, tasty, bright dish that is super-quick to rustle up and can take the boredom factor out of breakfast time.

Ingredients

Quantity Ingredient
1/4 red onion, finely chopped
1/2 red pepper, finely chopped
1/2 tablespoon olive oil
sea salt
6 cherry tomatoes, halved
2 eggs, lightly beaten
1/2 teaspoon mild smoked paprika
1 spring onion, cut into julienne, to serve (optional)

Method

  1. Sauté the onion and pepper in the oil, with a pinch of salt, until the onion has softened and the pepper has begun to soften.
  2. Add the tomatoes and sauté for another two or three minutes.
  3. Add the eggs and paprika and continue stirring until the eggs have scrambled. Sprinkle with the spring onion to serve, if you like.
