These are such a wonderful snack, perfect with a nice cup of tea! Packed with fibre, iron and B vitamins, plus they satisfy the sweet treat craving. What a bargain!

Ingredients

Quantity Ingredient
150g coconut oil, plus more for the tin
200g pitted dates, chopped
3 tablespoons honey
75g porridge oats
200g wholemeal flour
3 tablespoons mixed seeds

Method

  1. Oil a 23 cm baking tin with coconut oil. Preheat the oven to 180°C.
  2. Place the dates into a saucepan with 2 tablespoons of water. Heat the pan and cook the dates down to a gooey paste. In another pan, melt the honey and coconut oil together.
  3. In a bowl, mix the oats, flour and mixed seeds. Pour in the melted honey mixture and stir well to form a dough.
  4. Spoon half the dough into the prepared tin, pushing down firmly. Top with the date mixture, then spread the remaining dough over that.
  5. Bake in the oven for around 30 minutes, or until the top has turned a golden brown.
  6. Allow to cool completely in the tin before cutting into six to eight squares.

  • Best for constipation.
