A quick, filling and flavoursome breakfast.

Ingredients

Quantity Ingredient
1 plum tomato, chopped
2 teaspoons olive oil
2 large eggs, lightly beaten
70g feta cheese
small sprig basil, roughly chopped

Method

  1. Sauté the tomato in the olive oil for seven or eight minutes. Add the eggs and keep stirring until a scrambled egg has formed.
  2. Crumble over the feta cheese and basil.
