I really am quite the fan of dal. Simple fare, yet very filling and packed with nutrients. Red lentils are packed with soluble fibre, which swells in the gut and increases gut motility, gently and effectively. Great as a side dish with meat or fish, or just on its own.

Ingredients

Quantity Ingredient
1 red onion, finely chopped
3 garlic cloves, finely chopped
1 tablespoon olive oil
250g red lentils
500ml vegetable stock, (you may not need it all)
1/2-1 teaspoon mild curry powder, to taste
3 handfuls baby spinach

Method

  1. Sauté the onion and garlic in the olive oil, until the onion has softened.
  2. Add the lentils and a little of the vegetable stock and simmer. As the liquid starts to reduce, add more stock. Keep going like this until the lentils are soft and beginning to get broken down.
  3. Add the curry powder and mix thoroughly.
  4. Finally, keeping the dal on a very low heat, add the spinach and stir until it begins to wilt.

  • Best for constipation.
