Tuna steak with herbed bean salad

This is a gorgeous meal that is really a ‘dinner in minutes’ job. When you want something quick but don’t want to hit the junk food, this is ideal.

Ingredients

Quantity Ingredient
400g canned mixed beans, drained and rinsed
1 small bunch parsley, leaves chopped
1 small bunch coriander, leaves chopped
sea salt
freshly ground black pepper
1 large tuna steak
2 tablespoons olive oil, plus 2 teaspoons for the tuna
1/2 lime, juiced
lime wedges, to serve
1/2 teaspoon garlic powder or granules

Method

  1. Add the drained beans to a bowl with the chopped herbs and a pinch of sea salt and mix well, then set aside.
  2. Lightly fry the tuna steak for three minutes on each side (slightly less if you like it seared) in the 2 teaspoons of olive oil.
  3. Mix the lime juice, 2 tablespoons of olive oil, garlic powder and salt and pepper to taste and whisk well to form a dressing. Dress the mixed beans and mix well once more.
  4. Spoon the beans into the centre of the plate and top with the tuna steak. Serve with lime wedges.
