OK, fruit in a savoury soup. That sounds like I have finally tipped over the edge. But trust me, there is something so special about squash and goji berries. They intensify each other’s flavour beautifully. Give it a go. You’ll be glad you did!

Ingredients

Quantity Ingredient
1 large red onion, finely chopped
2 garlic cloves, finely chopped
1/2 tablespoon olive oil
low-sodium salt
1 small butternut squash, chopped, skin-on
2 handfuls goji berries
500ml vegetable stock

Method

  1. Sauté the onion and garlic in the olive oil, with a pinch of low-sodium salt, until the onion is nice and soft. Add the squash and goji berries.
  2. Add enough vegetable stock to just cover all of the ingredients, then simmer until the squash is soft and falls apart when prodded.
  3. Blend into a thick, bright orange soup.

Note

  • Good source of carotenoids, flavonoids and ajoene.
