These parcels are a speedy and fuss-free way of preparing tasty fish dishes, and a great way to capture lots of flavour. There really is no limit to the flavourings you can throw in the parcels.

Ingredients

Quantity Ingredient
2 mackerel fillets
2.5cm root ginger, peeled and cut into matchsticks
2 cloves garlic, sliced
1 small red chilli, sliced
1/2 lime, juiced
sea salt
black pepper

Method

  1. Preheat the oven to 180°C. Place 2 sheets of foil on a work surface and bunch each up into a bowl shape.
  2. Place a mackerel fillet in each foil bowl. Sprinkle half the ginger, garlic and chilli (chile) over each mackerel fillet. Squeeze over the lime juice and season with salt and pepper. Scrunch the top of each parcel together to enclose and seal.
  3. Place on a roasting tray and bake in the oven 25 minutes. Serve with a green salad.
