This is a serious flavour bomb and is as much at home in a bun with a burger as it is served as an accompaniment. It’s great with cheeses or oily fish, and amazing with vegetarian curries and stews.

Ingredients

Quantity Ingredient
1/4 large red cabbage
1 large, sharp apple
2 large carrots
1 tablespoon sesame seeds

For the dressing

Quantity Ingredient
1 heaped teaspoon miso paste
1 teaspoon honey
1/2 teaspoon mustard
2 teaspoons toasted sesame oil

Method

  1. Grate the cabbage, apple and carrots into a bowl.
  2. Place all the dressing ingredients with 2 teaspoons water in small bowl and mix together thoroughly. The dressing should have a smooth, creamy consistency, so add a little more water only if necessary.
  3. Dress the grated vegetables and toss well. Sprinkle the sesame seeds over the salad before serving.
