This is a great salad for fiery flavours, with a wonderful spectrum of nutrients added to boot. The cucumber and fennel offer contrast to the pepperiness, adding a cooling quality. With the sweetness of the dressing, this salad gives three interesting flavour hits in one.

Ingredients

Quantity Ingredient
50g watercress
2 handfuls baby spinach leaves
4-5 radishes, sliced
1/2 cucumber, cut into batons
1/2 fennel bulb, cut into thin matchsticks

For the dressing

Quantity Ingredient
2 teaspoons honey
1 teaspoon english mustard
1 teaspoon light soy sauce
1 tablespoon olive oil

Method

  1. Combine all the salad ingredients together in a bowl.
  2. Mix the dressing ingredients well to form a smooth, golden dressing. Dress the salad and toss well.
