Pear, rocket and Parmesan salad

This is a bit of a classic, and works beautifully with almost anything as a side dish. Fruit and greens can marry together beautifully, and the Parmesan is the culinary glue that brings the pear and rocket (arugula) together so well.

Ingredients

Quantity Ingredient
1 ripe pear
45g rocket
3-4 teaspoons haved parmesan cheese

For the dressing

Quantity Ingredient
1 teaspoon apple cider vinegar
1 tablespoon olive oil
sea salt
black pepper

Method

  1. Cut the pear lengthways into 8 slices, discarding any pips.
  2. Place the rocket (arugula) on a plate. Fan the pear slices out on top of it and sprinkle the Parmesan over the top.
  3. Whisk together the dressing ingredients, with salt and pepper to taste, and dress the salad to serve.
