Sea bass with smashed pea and feta crust and garlic cavolo nero

This is a lovely, fresh, tasty dish. Super-simple with plenty of flavour.

Ingredients

Quantity Ingredient
4 tablespoons frozen garden peas
2 slices feta cheese
olive oil, for oiling and cooking
2 sea bass fillets
2 cloves garlic, finely chopped
6 long cavolo nero leaves, shredded
sea salt
black pepper

Method

  1. Preheat the oven to 180°C.
  2. Place the peas in a small saucepan and cover with boiling water. Simmer for 6–8 minutes then drain and crush the peas with a fork. Crumble the feta cheese into the crushed peas along with a pinch of black pepper, and mix well.
  3. Lightly oil a baking sheet. Lay the sea bass fillets on the baking sheet. Spoon the pea mixture over the fillets and bake in the oven for around 20 minutes.
  4. Meanwhile, heat a little olive oil and sauté the garlic with a pinch of salt for about 2 minutes. Throw in the shredded cavolo nero and sauté until it turns a deep green and softens.
  5. Serve the sea bass with the garlic cavolo nero.
